Recipe giveaway! FISH PIE

I made this Fish Pie for the kids lunch today. It's a very simple dish yet fulfilling with carbohydrate, protein and fibre

What you'll need :
Ready to roll puff pastry - thaw
White fish fillet - cut into cubes
3 hard boiled eggs
Onion & garlic - chopped
A handful of Baby spinach
2 tbsp curry powder
2 tbsp butter
1/4 cup cream
Salt & pepper
Egg yolk

How to cook :
In a pan, melt the butter
Add garlic & onions. Sauté for a few minutes
Add fish cubes. Fry til half cook
Add curry powder.  Continue cooking for a while until the curry powder is well cooked
Add spinach followed by cream, salt and pepper
Cook until sauce thickens

Prepare pie dish
Spray a bit of olive oil on the base
Place a layer of puff pastry
Add the fish mixture
Cut the half boiled egg into small pieces and mix to the fish
Close the filling with a sheet of puff pastry
Seal the seams using a fork and prick the pie surface. Brush with egg yolk
Bake at 170oC for 25 mins or until brown
